If you start eating specialty cacao or high cacao chocolate everyday, you will notice a clear difference in your mindset and attitude after about 24 days, More clarity, better mood, improved blood pressure, this is no coincidence as coffee has caffeine, cacao has theobromine and theobromine is a fascinating compound. Today we celebrate the day of coffee and cacao and all I can say is that my life changed the day I embarked this journey. Recently I had The honor to dip my toe into the world of Big Cacao (or Cocoa) at the Cocoa association of Asia conference 2026. Cheers to @embavensingapur for their drive to keep the place for the sacred land of Cacao (Venezuela) The initiative to include all links of the supply chain and to place sustainability at the center of every aspect is remarkable, and I acknowledge the efforts being made. However, much more assistance and innovation are needed to address the profound inequalities that still exist within the industry. Without greater fairness in how value is distributed across the supply chain, the pledge to sustainability risks remaining more of a statement than a reality. Cacao is generosity and abundance, let s make it available to everyone, one bite at a time Would you challenge eating real chocolate for 24 days?

A few years ago, if someone had told me that I would end up making chocolate in Japan, I probably would have laughed. The truth is, I never planned to start a chocolate business. When the pandemic began, I was just getting started with my Venezuelan cacao bean import project. I had plenty of enthusiasm and big plans, but suddenly the world came to a stop. I found myself without customers, without orders, and honestly, without much to do. Meanwhile, something interesting was happening in Patanemo, Venezuela. The people growing the cacao decided to use that time to learn chocolate making. They already had something extraordinary: high-quality cacao. Yet many of them had never actually tasted chocolate made from their own beans. Little by little, they began transforming their cacao into chocolate, experimenting, learning, and improving. And something remarkable happened. As producers were finally able to taste the final result of their work, motivation increased dramatically. Quality improved. Fermentation improved. Drying practices improved. Traceability improved. It was no longer just about selling cacao beans; they could finally experience the true value of what they were producing. That was the moment when I told myself: "If they are making chocolate in Venezuela with their own cacao, then I need to make chocolate in Japan with Venezuelan cacao too." That decision started a completely new chapter.
One Bar. One Tree. Nature gives us everything. But what are we giving back? Across the world, cacao forests are under pressure. Climate change, industrial farming, and price systems controlled by massive corporations are slowly disconnecting chocolate from its true origin. And yet… Most people have never experienced what cacao can truly taste like when it is treated with respect, creativity, and soul. That is why I created “1 Bar for One Tree”. Not just as a chocolate project, but as a movement to reconnect people with flavor, nature, and conscious consumption. Over the next few weeks, we will be opening the doors of our Kichijoji chocolate lab for a very limited series of private tasting seminars. I’ll be presenting experimental cacao creations and flavor combinations never seen before — recipes developed through years of sourcing rare Venezuelan cacao, fermentation research, and sensory exploration. Some of these chocolates may never be released publicly. This experience is for people who want to discover what chocolate can become beyond the industrial world. If you would like to receive the details and be added to the priority guest list, leave a 🫶 in the comments. Let’s build a sweeter future together. One bar. One tree. See you in the comments! @cafeyciencia @cacaosanfrancisco
